Asian Beef and Broccoli Coleslaw

I made a really good and healthy dinner last night that I want to share with you. I have to admit, however, that I didn't think to take pictures or write anything down until I was almost halfway finished. Still, I think I got enough to pass on. This was all we had for dinner and it was enough to satisfy 2 people, so adjust the amounts if you're serving more people.​

​Here's what you need.

  • 1   12 oz bag broccoli slaw
  • 1/4 C chopped cilantro​
  • 1/4 chopped peanuts​
  • 1/8 C grape seed oil​
  • 1 TBL mirin (or substitute soy sauce)​
  • 2 TBL rice wine vinegar​
  • 1/2 lime, juice & zest​
  • 1 TBL Key lime honey (you can use regular honey and add the other 1/2 of the lime juice and zest)​
  • 1 large clove garlic, minced​
  • 1 tsp fresh ginger, minced​
  • 1/2 of a fresh jalapeño, seeded and chopped​
  • 1/2 C peanuts, chopped​
  • grilled steak (your choice of cut)​

Start by putting the slaw, cilantro, jalapeño, and peanuts in a serving bowl. I didn't mix the dressing first. i just added all of it to the slaw and tossed it.​ I started with the oil, then added the vinegar and lime juice and zest, and mirin and tossed well. Next I added the garlic, ginger, and honey and tossed again. Now thinly slice your grilled steak and add it. You're done!

Like everything I make, I encourage you to adjust all ingredients according to your specific tastes. More jalapeño if you want it spicier. More honey if you want it sweeter. I am lucky enough to have a son who lives in Florida and keeps me stocked with Key lime products. If you can get the honey it's yummy! I also recommend the key lime oil. If not, it's not a problem. Just add more fresh lime zest.​
