Chalupa Dip

There are some recipes that never seem to go out of fashion, and this is one of those recipes. I have been making chalupa dip for about 30 years and every time I make it, it's a huge hit. Here's what you'll need:

  • 1.5 lbs ground beef
  • 1 C chopped onion
  • 1 TBL chili pwder
  • 1 TBL cumin
  • 1 tsp garlic salt
  • 1 can refried beans
  • 1 7 oz can chopped green chilies
  • 3 C grated cheese (cheddar or 4 cheese Mexican blend)
  • 1 jar green chili salsa
  • 1 bunch scallions, chopped
  • 1 4 oz can sliced ripe olives
  • 2 C guacamole
  • 1 C sour cream

In a skillet, brown ground beef with onions until cooked. Drain. Add seasonings, refried beans, and green chilies and mix well and put mixture into an oven proof casserole dish.

Pour the green chili salsa over the meat mixture, then top with the grated cheese. You can make this part ahead of time and cover and refrigerate until you're ready to heat and serve. 

Bake uncovered at 400 degrees for 20-30 minutes until melted and bubbly. Remove from oven and let cool for about 5 minutes, then top with the sour cream, ripe olives, and guacamole.

Serve hot with tortilla chips. Ooey, gooey, delicious!!!
