I'm sure you've seen plenty of recipes for flourless peanut butter cookies, but I'm going to just say, these are the best! Peanut butter cookies are a favorite in this home, so I tinkered around until I got it just right. They are packed with peanut butter flavor and have a chewy texture with just the right amount of crunch. Here's what you'll need:
- 2 C crunchy peanut butter
- 2 C dark brown sugar
- 2 eggs
- 2 tsp baking soda
In a bowl, mix all the ingredients together until well blended. No need to drag out the mixer, this is easy to do with a fork. I use my small cookie scoop which I would say is about a tablespoon. Drop onto a parchment lined cookie sheet about an inch apart.
Bake at 350 degrees for 14 minutes. The cookies will get a crackled top and start to brown very slightly around the edges. Let them cool if you can wait that long!
You really need to use the crunchy peanut butter and DARK brown sugar to get the best results. If you don't have them, regular peanut butter and regular sugar will work, I just don't think the end result is as delicious. This makes 4 dozen cookies.
