Brisket Panini

I love a good panini!! Warm, slightly crisp on the outside and filled with gooey goodness on the inside. Yum! They are also a great way to turn leftovers into something new and delicious. I smoked a 10 pound brisket the other day, so I had a lot left over. I dug around in the refrigerator for a few more ingredients and came up with this. Here is what you'll need:

  • Hatch green chili hamburger bun (or any kind you have) 
  • 6 slices smoked brisket per panini
  • horseradish
  • sauted mushrooms
  • caramelized onion
  • 2 slices of pesto cheese ( or your favorite flavor) 

Start by heating your panini press. If you don't have one, a large skillet works just fine. Spread a small amount of horseradish on the bottom side of the bun. Add the brisket, then the mushrooms, then the onions, and finally the cheese. Add the top of the bun and spread a little butter on the top of it. Carefully turn it over and spread a little butter on the bottom bun as well. 

Place the sandwich in the press, apply a little pressure, then let it cook for about 5 minutes. If you are using a skillet, place another heavy skillet on top of the sandwich and cook one side, then flip it over and do the same with the other side.  Your panini is ready!
